3 cups cooked shredded chicken
15 ounces ricotta cheese
1 cup grated Parmesan cheese, plus more for topping
2 cups shredded mozzarella cheese, plus more for topping
1/4 cup fresh chopped parsley, plus more for garnish
2 cloves garlic, minced
1/4 cup finely chopped onion (or shallots)
1/2 teaspoon black pepper
Pinch of nutmeg (optional)
24 ounces (about 3 cups) Alfredo sauce, divided
1/2 cup marinara sauce (for the bottom of the dish, optional)


Instructions

Step 1: Prep Your Noodles. If using traditional lasagna noodles, cook them according to package directions until perfectly al dente. Drain, rinse with cold water, and lay them flat on a clean surface. For oven-ready noodles, simply proceed.
Step 2: Create the Creamy Chicken Filling. In a large bowl, combine the shredded chicken, creamy ricotta cheese, grated Parmesan, a generous portion of shredded mozzarella, fresh chopped parsley, minced garlic, and finely chopped onion. Season with black pepper and the optional pinch of nutmeg – it really brings out the best in the Alfredo flavors. Mix everything thoroughly until well combined.
