Ingredients
1 pound ground breakfast sausage (mild or hot)
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
2 cups shredded cheddar cheese, divided
Salt and freshly ground black pepper to taste
1 (32 ounce) bag frozen tater tots
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Step 2: In a large skillet, brown the ground sausage over medium-high heat, breaking it up with a spoon as it cooks. Once fully cooked, drain off any excess grease thoroughly.
Step 3: In a large bowl, combine the cooked and drained sausage, cream of mushroom soup, milk, and 1 cup of shredded cheddar cheese. Stir everything until well combined. Season with salt and black pepper to taste.
Step 4: Spread the sausage mixture evenly into the prepared baking dish.
Step 5: Arrange the frozen tater tots in a single layer over the sausage mixture.
Step 6: Bake for 30 minutes, or until the tater tots are golden brown and starting to crisp.
Step 7: Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the tater tots.
Step 8: Return the casserole to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the tater tots are golden and crispy. Let rest for 5-10 minutes before serving.
Notes
For a richer flavor, consider using full-fat milk or half-and-half in the soup mixture. Don't overcrowd the tater tots for best crispiness, and allow the casserole to rest briefly before serving for easier portioning.
