Ingredients
4 boneless skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1 tablespoon fresh parsley, chopped
Instructions
Step 1: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
Step 2: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Step 3: Add chicken to the skillet and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Step 4: Remove chicken from the pan and set aside on a plate to rest.
Step 5: In the same skillet, reduce heat to medium and add garlic, cooking for 30 seconds until fragrant.
Step 6: Pour in chicken broth and lemon juice, scraping the bottom of the pan to release the browned bits.
Step 7: Whisk in the remaining 2 tablespoons of butter until melted and the sauce has thickened slightly.
Step 8: Return the chicken to the pan, spooning the sauce over it, and garnish with fresh parsley before serving.
Notes
For the best results, use a meat thermometer to ensure the chicken reaches exactly 165°F without overcooking.
