Description

Ingredients

1/2 cup (1 stick) unsalted butter
2 cups shredded cooked chicken (rotisserie preferred)
1 bag (12 oz) frozen peas and carrots
1 tsp onion powder
1 tsp garlic powder
1/2 tsp black pepper
2 cups chicken stock
1 can (10.5 oz) condensed cream of chicken soup
1 box (11.36 oz) Red Lobster Cheddar Bay Biscuit Mix (with seasoning packet)
2 cups whole milk


Instructions

Step 1: Preheat your oven to 400°F (200°C). Place the stick of butter in a 9x13 inch baking dish and put it in the oven while it preheats until the butter is completely melted.
Step 2: Remove the dish from the oven. Evenly spread the shredded chicken over the melted butter. Layer the frozen peas and carrots directly on top of the chicken. Sprinkle with onion powder, garlic powder, and black pepper.
Step 3: In a medium bowl, whisk together the chicken stock and the cream of chicken soup until mostly smooth. Carefully pour this mixture over the chicken and vegetables. DO NOT STIR.
Step 4: In another bowl, whisk together the biscuit mix (including the flavor packet) and the milk until just combined. Pour this batter over the soup layer. DO NOT STIR.
Step 5: Bake for 45 to 50 minutes, or until the top is golden brown and the edges are bubbling. Let the cobbler rest for 5-10 minutes before serving to allow the sauce to thicken.
