Ingredients
4 cups cooked chicken, shredded or cubed
1 lb fresh broccoli florets, lightly steamed
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon curry powder
1.5 cups sharp cheddar cheese, shredded
1/2 cup Panko breadcrumbs or crushed butter crackers
2 tablespoons unsalted butter, melted
Salt and black pepper to taste
Instructions
Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
Step 2: Arrange the steamed broccoli florets in an even layer at the bottom of the prepared baking dish.
Step 3: In a large bowl, whisk together the cream of chicken soup, mayonnaise, sour cream, lemon juice, and curry powder until smooth.
Step 4: Fold the cooked chicken into the sauce mixture and season with salt and pepper as needed.
Step 5: Spread the chicken and sauce mixture evenly over the broccoli layer.
Step 6: Sprinkle the shredded cheddar cheese across the top of the casserole.
Step 7: In a small bowl, mix the breadcrumbs or cracker crumbs with the melted butter and sprinkle over the cheese.
Step 8: Bake for 25-30 minutes, or until the sauce is bubbling and the topping is golden brown.
Step 9: Let the dish rest for 5 minutes before serving to allow the sauce to set.
Notes
Using fresh broccoli instead of frozen prevents the dish from getting watery. Grating your own cheese ensures a smoother melt.
