Description
A creamy, zesty, and easy chicken orzo recipe made in just one skillet. Perfect for weeknight dinners and meal prep.
Ingredients
1.5 lbs boneless skinless chicken thighs, bite-sized pieces
1.5 cups dry orzo pasta
3.5 cups chicken broth
4 cloves garlic, minced
1 large shallot, finely diced
1 teaspoon dried oregano
2 cups fresh baby spinach
Zest and juice of 1 large lemon
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and oregano, then brown in the skillet for 5-6 minutes until golden. Remove chicken and set aside.
Step 2: In the same skillet, add the shallot and cook for 2 minutes. Add the garlic and cook for another 30 seconds until fragrant.
Step 3: Add the dry orzo to the skillet and stir for 1-2 minutes to toast the pasta slightly.
Step 4: Pour in the chicken broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 8-10 minutes, stirring occasionally to prevent the chicken orzo recipe from sticking.
Step 5: Stir the chicken back into the skillet along with the spinach. Cook for 2-3 minutes until the liquid is mostly absorbed and the chicken is cooked through. Finish by stirring in the lemon juice, zest, and Parmesan. Garnish with parsley and serve.
Notes
For a creamier texture, stir in a splash of heavy cream at the very end. Use low-sodium broth to better control the saltiness.
