Ingredients
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) corn, drained (or 1.5 cups fresh/frozen, thawed)
1 red bell pepper, finely diced
1 green bell pepper, finely diced
1/2 red onion, finely diced
1-2 jalapeños, seeded and finely diced (adjust to taste)
1 large ripe avocado, diced
1/2 cup fresh cilantro, chopped
1/4 cup olive oil
1/4 cup fresh lime juice (from 2-3 limes)
2 tablespoons red wine vinegar
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
Instructions
Step 1: Prepare Your Veggies. Begin by finely dicing all your fresh vegetables: red bell pepper, green bell pepper, red onion, and jalapeño. For the bell peppers, aim for small, even pieces – about a quarter-inch dice. For the red onion, a very fine dice is key to distributing its sharp flavor without overpowering. If you're sensitive to heat, remove the seeds and membranes from the jalapeño. For extra crunch, you can even soak the diced red onion in cold water for 10 minutes, then drain thoroughly, to reduce its pungency.
Step 2: Rinse and Drain Beans & Corn. Open your cans of black beans and drain them well. Place them in a colander and rinse thoroughly under cold running water until the water runs clear. If using canned corn, drain it similarly. If using frozen corn, thaw it completely and pat it dry with paper towels to remove any excess moisture.
Step 3: Make the Zesty Dressing. In a small bowl, whisk together the olive oil, fresh lime juice, red wine vinegar, minced garlic, chili powder, ground cumin, and a pinch of salt and black pepper. Whisk until thoroughly combined. Taste and adjust seasonings as needed. If you prefer a little more sweetness, a tiny drizzle of honey or agave can be added. For an extra kick, a dash of hot sauce or a pinch of cayenne pepper is always welcome!
Step 4: Combine All Ingredients. In a large mixing bowl, gently combine the diced red bell pepper, green bell pepper, red onion, jalapeño, rinsed black beans, and corn.
