Ingredients
1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 tbsp olive oil, divided
2 tbsp Cajun seasoning (adjust to taste for spice)
1/2 lb penne or fettuccine pasta
4 cloves garlic, minced
1/2 cup chicken broth
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese, plus more for garnish
1/4 cup fresh parsley, chopped, for garnish
Salt and black pepper to taste
Optional: 1/4 tsp red pepper flakes for extra heat
Instructions
Step 1: Pat chicken pieces dry and toss with 1 tablespoon of olive oil and Cajun seasoning until evenly coated. Set aside.
Step 2: Cook pasta according to package directions in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining. Set drained pasta aside.
Step 3: While pasta cooks, heat the remaining 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
Step 4: Reduce heat to medium. Add minced garlic to the same skillet and sauté for 1 minute until fragrant. Do not burn.
Step 5: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 1-2 minutes until slightly reduced.
Step 6: Stir in the heavy cream and bring to a gentle simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
Step 7: Remove from heat and stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
Step 8: Return the cooked chicken to the skillet with the sauce. Add the drained pasta and toss gently to coat everything evenly in the creamy garlic parmesan sauce.
Step 9: Season with salt and black pepper to taste. Garnish with fresh chopped parsley and extra Parmesan cheese before serving immediately. Enjoy your creamy garlic parmesan pasta cajun chicken recipe!
Notes
For a spicier kick, increase the amount of Cajun seasoning or add a pinch of cayenne pepper to the sauce. You can also add some vegetables like spinach or bell peppers for extra nutrition and flavor.
