Ingredients

12 large eggs
1/2 cup high-quality mayonnaise
1 tablespoon Dijon mustard
1 teaspoon yellow mustard
1 teaspoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika (for garnish)
Fresh chives, chopped (optional garnish)


Instructions

Step 1: Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a rolling boil.
Step 2: Remove from heat, cover, and let stand for 12 minutes.
Step 3: Transfer eggs to an ice water bath for 10 minutes to cool completely.
Step 4: Peel the eggs and slice them in half lengthwise.
Step 5: Remove yolks and place them in a bowl; mash with a fork until smooth.
Step 6: Mix in mayonnaise, both mustards, vinegar, salt, and pepper until creamy.
Step 7: Pipe or spoon the mixture back into the egg white halves.
Step 8: Garnish with paprika and chives before serving.

Notes

Use eggs that are about a week old for easier peeling. Always use an ice bath to prevent overcooking the yolks.
