1.5 lbs large or jumbo shrimp, peeled and deveined (fresh or thawed)
4-6 cloves garlic, minced
4 tbsp unsalted butter, divided
3 tbsp extra virgin olive oil, divided
1/4 cup dry white wine (e.g., Sauvignon Blanc, Pinot Grigio) or chicken broth
2 tbsp fresh lemon juice
1/4 cup fresh parsley, chopped
1/4 tsp red pepper flakes (optional)
Salt and freshly ground black pepper to taste


Instructions

Step 1: Prepare your ingredients by thawing and thoroughly patting dry the shrimp. Mince garlic, chop parsley, and measure out all liquids and fats. This preparation ensures a smooth cooking process.
Step 2: Heat a large skillet (cast iron or stainless steel works best) over medium-high heat for 1-2 minutes until hot.
Step 3: Add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter to the hot pan. Once melted and sizzling, add the shrimp in a single layer. Cook for 1-2 minutes per side, just until pink and opaque. Season with salt and pepper. Remove shrimp from the pan and set aside.
Step 4: Reduce heat to medium. Add the remaining 2 tablespoons of olive oil and 3 tablespoons of unsalted butter to the same skillet. Once melted, add the minced garlic and sauté for 30-60 seconds until fragrant, being careful not to burn it.
Step 5: Pour in the dry white wine (or chicken broth) and fresh lemon juice. Bring to a gentle simmer, scraping any browned bits from the bottom of the pan. Simmer for 1-2 minutes to allow the sauce to slightly reduce. Season with red pepper flakes (if using), salt, and pepper to taste.
Step 6: Return the cooked shrimp to the pan with the sauce. Toss gently to coat. Stir in the fresh chopped parsley. Serve immediately with your favorite sides like pasta, rice, or crusty bread.

Notes

Ensure shrimp are thoroughly patted dry before cooking to get a good sear. Do not overcook the shrimp, as they can become rubbery quickly. If you don't have white wine, chicken broth is a good substitute.
