Description

Tender-crisp green beans roasted to perfection with fresh garlic and nutty Parmesan cheese. A simple yet incredibly flavorful side dish that will become a family favorite.

1 lb fresh green beans, trimmed
2 tablespoons olive oil
4-5 cloves garlic, minced
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/4 cup freshly grated Parmesan cheese, plus more for garnish (optional)


Instructions

Step 1: Preheat your oven to 400°F (200°C).
Step 2: Wash and thoroughly dry the fresh green beans. Trim off the tough stem ends.
Step 3: In a large bowl, combine the dried, trimmed green beans with the olive oil. Toss well to ensure even coating.
Step 4: Add the minced garlic, salt, and black pepper to the bowl. Toss again until all the beans are evenly seasoned.
Step 5: Spread the seasoned green beans in a single layer on a large baking sheet. Ensure not to overcrowd the pan; use two sheets if necessary.
Step 6: Roast for 10-15 minutes, stirring once halfway through, until the beans are tender-crisp and slightly blistered or browned.
Step 7: Remove the baking sheet from the oven. Sprinkle the freshly grated Parmesan cheese over the hot green beans and toss gently to coat.
Step 8: Taste and adjust seasonings if needed. Serve immediately.

Notes

For best results, make sure your green beans are completely dry before tossing with olive oil and roasting. This prevents steaming and promotes beautiful caramelization. You can add a squeeze of fresh lemon juice at the end for an extra burst of brightness.
