1 large (0.6 oz / 17g) packet sugar-free gelatin (any flavor, e.g., Strawberry, Cherry, Lime)
1 cup boiling water
1 cup cold water (or ice water)
1 cup fresh or frozen mixed berries (strawberries, blueberries, raspberries) or other preferred fruit, chopped if large


Instructions

Step 1: In a heat-proof mixing bowl, pour 1 cup of boiling water.
Step 2: Add the entire packet of sugar-free gelatin to the boiling water. Whisk continuously for at least 2 minutes until the gelatin powder is completely dissolved. Ensure there are no grainy particles remaining.
Step 3: Stir in 1 cup of cold water (or ice water) into the dissolved gelatin mixture. Continue to stir until well combined.
Step 4: Allow the Jello mixture to cool at room temperature for about 5-10 minutes. This slight cooling helps prevent the fruit from sinking to the bottom.
Step 5: Gently fold in the fresh or frozen fruit into the slightly cooled Jello mixture. Distribute the fruit evenly.
Step 6: Carefully pour the mixture into individual serving dishes, ramekins, or a larger glass dish. Cover the dishes, preferably with cling film, and refrigerate for a minimum of 4 hours, or until the Jello is completely set and firm. For best results, chill overnight.

Notes

For best results, ensure your gelatin is fully dissolved before adding cold water. Avoid fresh pineapple, kiwi, and papaya directly in the Jello as their enzymes can prevent it from setting unless pre-cooked. Overnight chilling yields the firmest Jello.
