Ingredients
2 cups old-fashioned rolled oats
1 cup confectioners' sugar (for mixture)
1/2 cup unsweetened cocoa powder
1/2 cup finely shredded coconut (unsweetened or sweetened)
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1 teaspoon vanilla extract
1/2 cup confectioners' sugar (for coating, or more coconut/cocoa)
Instructions
Step 1: In a large mixing bowl, combine the rolled oats, 1 cup confectioners' sugar, cocoa powder, and finely shredded coconut. Whisk these dry ingredients together until well combined.
Step 2: In a separate microwave-safe bowl, combine the creamy peanut butter and butter. Microwave on high for 30-60 seconds, or until the butter is melted and the mixture is smooth. Stir well.
Step 3: Pour the melted peanut butter mixture over the dry ingredients. Add the vanilla extract. Mix everything thoroughly with a sturdy spoon or rubber spatula until all the dry ingredients are moistened and a cohesive dough forms.
Step 4: Cover the bowl and refrigerate the mixture for at least 30 minutes. This chilling time helps the mixture firm up, making it easier to roll.
Step 5: While the mixture is chilling, place the remaining 1/2 cup confectioners' sugar (for coating) in a shallow dish. Alternatively, you can use additional shredded coconut, cocoa powder, or sprinkles.
Step 6: Remove the chilled mixture from the refrigerator. Using a small cookie scoop or your hands, roll the mixture into 1-inch balls.
Step 7: Gently roll each ball in the confectioners' sugar (or your chosen coating) until it's evenly coated. Place the coated balls on a parchment-lined baking sheet or platter.
Step 8: Chill the finished balls for another 15-30 minutes before serving. Store them in an airtight container in the refrigerator.
Notes
For an even richer chocolate flavor, melt 1/4 cup chocolate chips with the peanut butter and butter in Step 2. If the mixture is too dry, add a tiny bit more melted butter; if too wet, add a tablespoon of extra oats.
