3 tablespoons extra virgin olive oil

2 sprigs fresh thyme or rosemary (optional)

Instructions

Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Wash and peel the carrots. Cut them into uniform 2-3 inch pieces. If carrots are thick, halve or quarter them lengthwise.
Step 3: In a small bowl, whisk together the olive oil, honey (or maple syrup), minced garlic, salt, and black pepper.
Step 4: Place the prepared carrots in a large bowl. Pour the glaze mixture over the carrots and toss until every piece is evenly coated.
Step 5: If using fresh herbs, add the sprigs to the bowl and toss gently with the coated carrots.
Step 6: Spread the carrots in a single layer on the prepared baking sheet, ensuring not to overcrowd the pan. Use a second sheet if necessary.
