Ingredients
2 large sweet potatoes (Garnet or Jewel preferred)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup crumbled feta cheese (from block in brine is best)
2 tablespoons honey
Fresh parsley or chives for garnish (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Scrub sweet potatoes thoroughly, then slice into uniform 1/4-inch thick rounds.
Step 2: In a large bowl, toss the sweet potato rounds with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until every round is lightly coated.
Step 3: Arrange the seasoned sweet potato rounds in a single layer on your prepared baking sheet, ensuring they do not overlap. Roast for 20-25 minutes, flipping halfway through, until tender, golden, and caramelized.
Step 4: Once roasted to perfection, carefully transfer the warm sweet potato rounds to a serving platter or individual plates.
Step 5: Immediately and generously sprinkle the 1/2 cup of crumbled feta cheese over the warm sweet potato rounds.
Step 6: Drizzle 2 tablespoons of honey evenly over the feta-topped sweet potatoes. Add more if you prefer a sweeter taste.
Step 7: For an optional touch of freshness and color, garnish with finely chopped fresh parsley or chives. Serve warm and savor every bite.
Notes
For best caramelization, ensure sweet potato rounds are in a single layer and do not overcrowd the baking sheet. Using block feta packed in brine will provide a creamier, tangier flavor than pre-crumbled varieties.
