Ingredients
2 1/2 cups finely crushed vanilla wafers (about 12 oz pkg)
1/2 cup unsweetened cocoa powder
1 cup powdered sugar, plus more for coating
1/2 cup dark or spiced rum (more if needed for consistency)
1/4 cup light corn syrup or honey
Optional coatings: finely shredded coconut, sprinkles
Instructions
Step 1: In a large mixing bowl, combine the finely crushed vanilla wafers, 1/2 cup unsweetened cocoa powder, and 1 cup powdered sugar. Whisk thoroughly until well combined, ensuring there are no lumps.
Step 2: Add 1/2 cup rum and the light corn syrup (or honey) to the dry ingredients. Mix well with a sturdy spoon or your hands until a moist, uniform dough forms. The mixture should hold together when pressed but not be overly sticky. If it feels too dry, add rum a teaspoon at a time until the desired consistency is reached. If too wet, add a tablespoon of extra crushed wafers.
Step 3: Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes. This chilling period will firm up the dough, making it much easier to roll.
Step 4: Prepare your coating station. Place extra powdered sugar, additional cocoa powder, shredded coconut, or sprinkles in separate shallow dishes. Using a small cookie scoop (about 1 tablespoon), scoop out portions of the dough.
Step 5: Roll each portion between your palms into smooth, round balls. Immediately drop each rum ball into your chosen coating and roll gently to cover completely. If the dough becomes too soft to work with, return it to the refrigerator for a few minutes.
Step 6: Place the coated rum balls on a baking sheet lined with parchment paper. Once all balls are rolled and coated, refrigerate them for at least 1-2 hours, or preferably overnight, to allow them to set and the flavors to fully develop.
Step 7: Store rum balls in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2-3 weeks. The flavor often improves after a day or two as the rum permeates the mixture.
