4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
3 tbsp olive oil

1/4 tsp black pepper, or to taste


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the cubed sweet potatoes, minced fresh garlic, chopped fresh rosemary, chopped fresh thyme, olive oil, sea salt, and black pepper. Toss everything together until the sweet potatoes are evenly coated.
Step 3: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded; use two baking sheets if necessary to allow for proper roasting and browning.
Step 4: Roast for 20-25 minutes, then carefully flip the sweet potatoes with a spatula. Continue roasting for another 15-20 minutes, or until the sweet potatoes are tender, caramelized, and slightly crispy on the edges.
