1 bag (about 28 oz / 800g) frozen tater tots
2 tablespoons unsalted butter
2 cloves garlic, minced
1 small jalapeño, finely diced (seeds removed for less heat, optional)
2 tablespoons all-purpose flour
1 ½ cups milk (whole or 2%)
8 oz sharp cheddar cheese, freshly grated
2 oz cream cheese, softened
¼ teaspoon cayenne pepper (or more, to taste)
Salt to taste
Black pepper to taste
Fresh cilantro or green onions, chopped (for garnish, optional)


Instructions

Step 1: Preheat your oven and prepare the tater tots. Follow the package instructions for your frozen tater tots, usually around 400°F (200°C). Arrange them in a single layer on a baking sheet. Ensure they have enough space to crisp up. For an extra crispy tot, consider a light spray of cooking oil before baking. Bake until golden brown and super crispy, approximately 20-25 minutes. While they bake, move on to the sauce!
Step 2: Melt the butter in a medium saucepan over medium heat. Once melted, add the minced garlic and finely diced jalapeño. Sauté for about 2-3 minutes until fragrant and slightly softened. This step infuses the butter with incredible flavor, forming the base for our spicy cheddar cheese sauce.
Step 3: Whisk in the all-purpose flour. Cook for 1 minute, stirring constantly, to create a roux. This will help thicken the sauce and prevent a raw flour taste. The roux is essential for a smooth, lump-free sauce.
Step 4: Gradually pour in the milk, whisking continuously to prevent lumps. Bring the mixture to a gentle simmer, stirring frequently, until the sauce begins to thicken, about 3-5 minutes. It should be thick enough to coat the back of a spoon.
Step 5: Reduce the heat to low. Add the freshly grated sharp cheddar cheese, cream cheese, and cayenne pepper to the saucepan. Stir constantly until all the cheese has melted and the sauce is smooth and creamy. Taste and season with salt and black pepper as needed. If you want it spicier, add a tiny bit more cayenne, tasting as you go.
Step 6: Once the tater tots are perfectly crispy, remove them from the oven. You can serve them immediately, either drizzled generously with the spicy cheddar cheese sauce or as a dipping station. Garnish with chopped fresh cilantro or green onions for an extra burst of freshness and color.

Notes
