Ingredients
2 quarts (8 cups) apple cider
2 cups cranberry juice (optional, for color and tartness)
1/2 cup packed light brown sugar (or to taste)
2 large oranges, one sliced, one studded with cloves
2 medium apples, sliced (e.g., Honeycrisp, Fuji)
6-8 cinnamon sticks
2 tablespoons whole cloves (plus extra for studding oranges)
1-inch piece fresh ginger, sliced
1 teaspoon allspice berries
2-3 star anise pods
Instructions
Step 1: Prepare your fruit. Wash the oranges thoroughly. Using a skewer or toothpick, poke holes all over one orange and then stud it generously with whole cloves. Slice the remaining orange and apples into rounds.
Step 2: In a large stockpot or slow cooker, combine the apple cider, cranberry juice (if using), and brown sugar. Stir until the brown sugar is fully dissolved.
Step 3: Add the studded orange, sliced oranges, sliced apples, cinnamon sticks, ginger root, allspice berries, and star anise to the pot. Cover the pot.
Step 4: Heat the mixture gently. If using a stockpot, bring it to a low simmer over medium-low heat. Do not boil. If using a slow cooker, set it to low for 2-3 hours or high for 1-2 hours. Stir occasionally.
Step 5: Once the Wassail has simmered for at least one hour (or the designated slow cooker time), taste and adjust sweetness if desired. Carefully remove the ginger root and any large pieces of spent spice before serving.
